Tea is an infusion produced by pouring hot or boiling water onto the leaves of Camelia sinensis. The term "herbal tea" is used to refer to other aromatic beverages using herbs and other plant materials.

Green tea is from the dried, unfermented leaves. Black tea is first fully fermented (allowed to oxidise) before drying. Semi-fermentation (partial oxidation) produces oolong tea.
